AS 345 - Value Added Meat Production and HACCP


Investigate methods to add value to meat and meat products, including hands-on processing, product development, and industry tours. Additionally, quality control issues and HACCP systems will be investigated in depth and each student will receive HACCP certification from the International HACCP Alliance.Credits: 3Prerequisites: P, AS 241.Corequisites: Corequisite course AS 345L.
