DS 542 - Dairy Product and Process Development

Credits: 3

Students will work in small groups to design and produce a prototype dairy product. The course will include standards of identity for dairy products, nutritional labeling requirements, least cost formulation, design of manufacturing processes and methods for planning product development. Prerequisites: DS 500.
